Red velvet cupcakes

Por San Valentín os traigo estos cupcakes de red velvet. Es una receta muy típica Americana y esta muy rica.
El sabor es chocolate y el nombre viene de la textura del bizcocho, es muy esponjosa.
Yo los he rellenado de nutella, y el frosting es de vainilla. La decoración del corazón es de fondant blanco teñido con colorante rojo de Wilton (red red o rojo intenso)


For Valentine's day I'm going to show you this red velvet cupcakes I made.
Instead of cream cheese frosting I decided to make vanilla frosting. I also filled them in with Nutella and added some fondant decorations.



    Ingredients:

    Muffins: (lines 12 cupcakes)

    -2 1/2 cups fluor
    -2 tbs cocoa podwer
    -1 teaspoon salt
    -1 1/2 cups sugar
    -1 1/2 cups vegetable oil
    -2 large eggs
    -Red gel food color (I used red red Wilton, just add until you like the color)
    -1 teaspoon vanilla extract
    -1 cup buttermilk
    -1 1/2 teaspoons of baking soda
    -2 teaspoons distilled white vinegar

    Preheat oven to 350ºF.
    Whisk together dry ingredients (fluor, cocoa and salt) and set aside.
    Mix oil with sugar until well combined and then add the eggs, color and vanilla.
    Carefully add the dry ingredients and mix. When the batter is creamy add buttermilk.
    In a small bowl, mix baking soda and vinegar. It will foam and it's what actually gives that moist texture to the muffin. Quickly add it to the batter and with a rubber spatula mix for 10 seconds.
    Fill 1/2 cupcake liners and bake during 20 min or until a cake taster comes out clean.
    Let the cupcakes cool before decorating. I filled mines with nutella! :)

    Frosting:
    - 1 stick of butter
    - 3/4 cups confectioners sugar
    - 1tbs milk
    - Vanilla

    As always, mix together (carefully) all ingredients  untilf fluffy and creamy.
    I used a 1m open star tip to decorate my cupcakes.





    Ingredientes: 
    - 55 gr mantequilla
    -150 gr azúcar
    -1 huevo
    - 2 tbs de cacao
    - Colorante rojo (hasta que te guste el color)
    -1tbs de vainilla
    -120 ml de buttermilk (lo podéis hacer en casa añadiendo 1/2 cucharada de zumo de limón a la leche. Espera cinco minutos y listo!)
    -150 gr de harina
    -1/2 tbs de bicarbonato de soda/levadura
    -1 tbs de vinagre blanco

    Frosting:
    -170 gr de mantequilla a temperatura ambiente
    -340 gr de azúcar class
    -1 tbs leche
    - Vainilla al gusto

    Precalentamos el horno a 180º y ponemos en la bandeja para cupcakes las cápsulas.
    Por un lado, tamizamos los ingredientes secos.
    Por otro, batimos el azúcar con la mantequilla y sin dejar de batir añadimos los huevos y el extracto de vainilla. 
    Cuando esté bien mezclado añadimos la harina y el buttermilk y mezclamos bien.
    Ahora es el turno del colorante. Yo fui añadiendo poco a poco hasta que me gustó el color. Son mejor los colorantes en gel/pasta que los líquidos.
    Por último, mezclamos a parte el bicarbonato y el vinagre. Va a empezar a burbujear y eso es lo que le va a dar textura. Añádelo a la masa y mezclalo con una espátula de goma, de forma envolvente (unas siete vueltas) y rápidamente llena las cápsulas hasta la mitad y mételas en el horno para que no pierda textura.
    Hornea durante unos veinte minutos o hasta que al insertar un palillo salga limpio.
    Deja enfriar bien antes de decorar! Yo los mios los he rellenado de Nutella.

    Para el frosting, como siempre, mezclamos todos los ingredientes hasta que quede cremoso.
    Con la epspátula lo ponemos en la manga, siempre pegándolo a los laterales para que no haya burbujas de aire. Y listo para decorar!
    Yo he usado una punta 1m de estrella abierta.
